TASTING A typical wine of the appellation. A true and bright ruby red colour. On the palate, notes of red fruits, morello cherries, develop and are true to the aroma of the dominant Merlot. The ripe Cabernet grapes fill it with aromas of little berries (blackcurrant), as well as some spicy notes. On the palate it is a round full-bodied wine, with soft and elegant tannins. It is a vin de garde (5 to 7 years), well structured and full-bodied wine thanks to the presence of cabernet grapes harvested at the right moment
GROUND AREA: 5.50 Hectares
Stock of vines : 80% Merlot, 20%Cabernet Franc.
Soil : Silty clay, situated on a plateau in the hearth of Entre-deux-Mers
AGE OF VINES: 25 to 30 years.
METHODOLOGY OF THE VINEYARD : Yield selection and control by means of disbudding. Removal of excess leaves to improve ripening of the fruit on the east-facing side when the fruit is still pea sized. To control the maturation, the Deprech method analyses are used.
METHODOLOGY OF VINIFICATION : Cold pre-fermentation maceration for 3 or 4 days. Optimised pillicular extraction. Long duration of fermentation (approximately 30 days) Post fermentation extraction at around 28?C to extract as much tannin as possible. Aired propagation during the ageing process to stabilise the colour and the tannins. The Wine has only had one very light filtration so as to conserve its organoleptic qualities.
