TASTING: Beautiful colour, crimson with glints of ruby red, bright and clear. Notes of ripe fruit, of average intensity. Excellent immediate flavour when tasted, which then develops harmoniously with wonderful aromatic persistence.
LOCATION OF VINEYARD The Ch‚teau Mayne Valence is situated in the town of Sainte Terre which is just to the south of Saint Emilion. The vineyard covers an area of 20 hectares. The soil is a mix of clay and sand on top of a subsoil of gravel.
STOCK OF VINES: Harmonious mix of Merlot 70%, cabernet Sauvignon 25% and Cabernet Franc 5%.
METHODOLOGY OF VINEYARD The vines are double guyot pruned, with an average controlled yield of around 55 hl. Excess leaves are removed 60 days before harvesting so as to allow for optimal ripening of the grapes.
VINIFICATION: The harvest is done partially by hand. The grapes are selected before going to the fermenting room. In a stainless steal cellar equipped with temperature control, the fermentation last some 20 days. During the fermentation process, 3 to 4 daily pumping tale place in order to extract the best tannins.
AGEING : Ageing last about 16 months, then the wine is clarified ; filtered and bottles at the Chateau.
